Spinach Artichoke Chicken Casserole

This hot chicken casserole is filled with cheese, spinach, artichoke hearts and more. The epitome of comfort food, just right for cozy nights in.

Ingredients

  • 8 oz. cream cheese softened
  • 16 oz. sour cream
  • 1 cup parmesan cheese divided
  • 2 cups monterey jack cheese divided
  • 2 cloves garlic mined
  • ½ onion chopped
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • 4 cups chopped cooked chicken
  • 24 oz. artichoke hearts just canned not pickled, drained
  • 12 oz. fresh spinach chopped

Instructions

  • Preheat oven to 400º
  • In a large bowl, thoroughly combine cream cheese, sour cream, ½ cup parmesan, 1 cup monterey jack, garlic, onion, salt, and pepper together

  • Stir in the chicken, artichoke hearts, and spinach

  • Spread into a 9x13 inch casserole dish

Notes

This is a HUGE casserole. Seriously. It weighs several pounds.
If you want to save dirty dishes you can mix it right in the casserole dish.
