Chewy Gingerbread Bars are baked up and then frosted with a luscious cream cheese frosting for the ultimate gingerbread cookie taste!

Ingredients

Gingerbread Bars

  • 1 ½ cups flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ teaspoon ground ginger
  • ¾ teaspoon cinnamon
  • teaspoon cloves
  • teaspoon nutmeg
  • ½ cup softened butter
  • ¼ cut dark brown sugar
  • ¼ cup blackstrap molasses

Cream Cheese Frosting

  • 4 oz. cream cheese room temperature
  • ½ cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • *optional* milk to loosen the frosting

Instructions

  • Preheat oven to 350º
  • grease an 8x8 baking pan and line with parchment paper, set aside
  • Combine flour, baking powder, salt, and spices in a mixing bowl and set aside
    Dry Ingredients for gingerbread bars.
  • In a separate bowl, beat butter, brown sugar, and molasses together until well blended
    Wet ingredients for gingerbread bars.
  • Stir in dry ingredients until all is incorporated
    Bar Cookies Dough ready to go in the pan.
  • Press into prepared 8x8 baking pan, and bake for about 18 minutes, until bars are set and appear dry on top
    Ready to bake bar cookie dough.
  • Remove from oven, use parchment to life out of the pan and place on a wire rack, and let cool completely
    Finished bar cookie.
  • make the frosting by beating together the cream cheese, butter, and powdered sugar until smooth
  • drizzle in enough vanilla to make a spreadable frosting, and add a little milk if needed to make the frosting spreadable

  • spread on completely cooled bars, add sprinkles if desired
  • cut into bars

Notes

  • This recipe doesn't have eggs
  • You can use a handheld OR stand mixer for this recipe
