Buckeye Brownies

Ingredients

Brownies

  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup butter melted
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1/2 tsp baking powder

Peanut Butter Topping

  • 1/2 cup unsalted butter softened
  • 1/2 cup smooth peanut butter
  • 1 3/4 cup powdered sugar
  • pinch of salt

Chocolate Topping

  • 6 ounces semi sweet or dark chocolate chopped
  • 1/2 cup butter

Instructions

  • preheat the oven to 350°
  • line an 8x8 baking pan with parchment paper, and leave two sides up higher than the sides of the pan, set aside
  • whisk the sugar, eggs, and vanilla together
  • then whisk in the melted butter
  • combine the dry ingredients for the brownies in a separate bowl
  • then stir into the wet ingredients just until combined
  • pour into the prepared pan
  • bake in the preheated oven for 20-25 minutes
  • remove from the oven and cool completely on a baking rack
  • once cool beat the filling ingredients together until smooth and creamy
  • spread over the completely cooled brownies
  • chill while you make the top layer
  • melt the chocolate and butter together in the microwave in 10 seconds intervals until the chocolate is melted
  • pour over the chilled brownies and spread evenly before it sets up
  • chill again until the chocolate is set up
  • cut into 16 brownies and keep refrigerated until ready to serve
