Crock Pot Meatloaf - Gluten Free or Grain Free/Paleo Version

Ingredients

  • 2 pounds ground beef 85 % lean
  • 1 cup ground gluten free oats --grind them in your food processor if you have rolled oats
  • 1/4 medium onion
  • 3/4 cup dill pickles
  • 2 medium carrots peeled
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 3 eggs
  • 1/2 cup topping can be barbecue sauce, chili sauce, ketchup, mustard

Instructions

  • break the ground beef up slightly into a mixing bowl
  • grind your oats in a food processor with a chopping blade and measure 3/4 cup sprinkle on the beef
  • in the same bowl you ground the oats process the pickles, onions and the carrot until minced
  • pour over the oat crumbs
  • add salt and pepper, mix with clean hands gently, just to start mixing
  • then break the eggs in and mix gently but very well, you're looking for even distribution of the ingredients without making a condensed product
  • once it's well mixed shape into two loaves
  • place on a baking sheet and freeze until solid
  • once frozen, wrap in plastic wrap and then in a freezer bag and freeze until ready to use
  • to cook: take a frozen meatloaf and unwrap it,
  • place it in your crock pot
  • cook on high at least 6 hours
  • then top with your desired sauce (I use a kicked up ketchup thing with a dash of hot sauce, smoke flavor and a little extra brown sugar)
  • cover, reduce heat to low if you need to and cook another 2 hours or so
