Servings:

Author:
Laura
Ingredients
2
pounds
ground beef
85 % lean
1
cup
ground gluten free oats
--grind them in your food processor if you have rolled oats
1/4
medium
onion
3/4
cup
dill pickles
2
medium
carrots
peeled
1
teaspoon
of salt
1
teaspoon
of pepper
3
eggs
1/2
cup
topping
can be barbecue sauce, chili sauce, ketchup, mustard
Instructions
break the ground beef up slightly into a mixing bowl
grind your oats in a food processor with a chopping blade and measure 3/4 cup sprinkle on the beef
in the same bowl you ground the oats process the pickles, onions and the carrot until minced
pour over the oat crumbs
add salt and pepper, mix with clean hands gently, just to start mixing
then break the eggs in and mix gently but very well, you're looking for even distribution of the ingredients without making a condensed product
once it's well mixed shape into two loaves
place on a baking sheet and freeze until solid
once frozen, wrap in plastic wrap and then in a freezer bag and freeze until ready to use
to cook: take a frozen meatloaf and unwrap it,
place it in your crock pot
cook on high at least 6 hours
then top with your desired sauce (I use a kicked up ketchup thing with a dash of hot sauce, smoke flavor and a little extra brown sugar)
cover, reduce heat to low if you need to and cook another 2 hours or so
Notes
this recipe makes two loaves that will feed four
