Vegan Dragon Fruit Popsicles

Red Dragon Fruit is sweet, juicy and wonderful in so many ways. You can use it in a fruit salad, smoothies or try these Vegan Dragon Fruit Popsicles, sure to please the whole crowd on a hot summer day.

Ingredients

  • 1 can coconut milk
  • 2 TBSP chia seeds
  • 1 TBSP agave syrup
  • 1 Red Dragon Fruit

Instructions

  • whisk the coconut milk, chia seeds and agave syrup together, let rest 15 minutes or until the chia seeds have thickened the milk
  • slice the Red Dragon Fruit in half
  • scoop the fruit into the bowl of a food processor
  • blend until pureed
  • you will need bowls for the next part
  • divide the coconut milk roughly in thirds, 2/3s in one bowl, the other 1/3 in another bowl
  • set the 1/3 bowl of coconut milk aside, that's the white base
  • to the bowl with 2/3s of the coconut milk add a little over half of the pureed Red Dragon Fruit, stir to combine, this is the middle layer
  • the remaining Red Dragon Fruit Puree is the top layer
  • Freeze for 6 hours or until frozen solid

Notes

  • You will need a popsicle mold to make these popsicles. I used an average size mold and make 6 pops. Your yield may vary if your popsicle mold is bigger or smaller.
  • Feel free to mix up your layers, put the fruit at the bottom and switch it up.
  • Or add other fruits to the layers for an even more refreshing popsicle.
