Loaded Twice Baked Potatoes

Ingredients

baked potatoes
roughly 10-12cooked weight
1/3
cup
sour cream
3
TBSP
crumbled bacon
divided
1
TBSP
snipped chives or green onion tops
1/2

shredded cheese
salt
to taste
pepper
to taste
Instructions
preheat oven to 375˚
cut potatoes in half, scoop out the insides leaving a 1/2 inch or so shell around the edge
mash up the insides of the potatoes until fairly well broken up
add sour cream, 2 TBSP bacon, chives and cheese and mix well
taste for salt and pepper and add as needed, don't fast too much you need to stuff those potato shells
stuff the potato shells and sprinkle with the reserved bacon
place in a baking dish and bake for 30 to 35 minutes until hot through
run it briefly under the broiler to brown up the top if you like
serves 4 unless you've got lumberjacks
