Loaded Twice Baked Potatoes

Ingredients

  • 2 baked potatoes roughly 10-12cooked weight
  • 1/3 cup sour cream
  • 3 TBSP crumbled bacon divided
  • 1 TBSP snipped chives or green onion tops
  • 1/2 cup shredded cheese
  • salt to taste
  • pepper to taste

Instructions

  • preheat oven to 375˚
  • cut potatoes in half, scoop out the insides leaving a 1/2 inch or so shell around the edge
  • mash up the insides of the potatoes until fairly well broken up
  • add sour cream, 2 TBSP bacon, chives and cheese and mix well
  • taste for salt and pepper and add as needed, don't fast too much you need to stuff those potato shells
  • stuff the potato shells and sprinkle with the reserved bacon
  • place in a baking dish and bake for 30 to 35 minutes until hot through
  • run it briefly under the broiler to brown up the top if you like
  • serves 4 unless you've got lumberjacks
