preheat the oven to 350˚
line a baking sheet with parchment paper
spread the granola and the coconut on the baking sheet
toast for 2-3 minutes in the oven, this goes quickly so do set the timer
once toasted let the mixture cool for 10 minutes
melt half the chocolate and the coconut oil in the top of a double boiler
once melted remove from the heat and stir in the rest of the chocolate until it melts as well
slowly stir in the toasted granola and coconut with a rubber spatula until well blended
scoop by Tablespoon onto the same parchment lined baking sheet, you should have 12 nests
using a small spoon hollow out each nest
nestle one or two eggs in each nest, I used a combination of yogurt covered raisins, jordan almonds and sun drops
once filled chill for at least an hour
these will store for 2-3 days in the fridge so best to make them and give them quickly
