Coconut Granola Nests

These sweet little nests are fun to make and eat, and they're versatile too, you decide what to put in the nests. Featuring Baobob Granola and Chocolate Chips by Simple Truth from Kroger you'll appreciate natural ingredients to make any Easter basket sweeter.

Ingredients

  • 2/3 cup Simple Truth Baobob Coconut Granola
  • 2/3 cup desiccated coconut not sweetened, you can find this in the bulk department of most grocery stores
  • 4 ounces Simple Truth Chocolate Chips
  • 1/2 tsp Simple Truth Coconut Oil
  • 18-24 nest fillers I used yogurt covered raisins, jordan almonds, and sun drops

Instructions

  • preheat the oven to 350˚
  • line a baking sheet with parchment paper
  • spread the granola and the coconut on the baking sheet
  • toast for 2-3 minutes in the oven, this goes quickly so do set the timer
  • once toasted let the mixture cool for 10 minutes
  • melt half the chocolate and the coconut oil in the top of a double boiler
  • once melted remove from the heat and stir in the rest of the chocolate until it melts as well
  • slowly stir in the toasted granola and coconut with a rubber spatula until well blended
  • scoop by Tablespoon onto the same parchment lined baking sheet, you should have 12 nests
  • using a small spoon hollow out each nest
  • nestle one or two eggs in each nest, I used a combination of yogurt covered raisins, jordan almonds and sun drops
  • once filled chill for at least an hour
  • these will store for 2-3 days in the fridge so best to make them and give them quickly

Notes

  • parchment paper works well to make clean up and removal of nests so easy, you could use aluminum foil as a substitute
  • a one Tablespoon cookie scoop makes nice round evenly sized nests, use a Tablespoon measuring spoon if you don't have a cookie scoop
  • you will need "eggs" or nest fillers, I used a combination of yogurt covered raisins, jordan almonds and sun drops, but you could also use jelly beans or anything else that strikes your fancy[recipe]
