Barbecued Potatoes on the Grill

These Barbecued Potatoes on the Grill are basically a grill version of one of my very favorite winter side dishes, Barbecue Potatoes, but on the grill! I just don't have any desire to crank up the oven in the summer and my kids will only tolerate pasta and potato salads for so long before they ask for something else.

Ingredients

  • 2 pounds potatoes a little more or less wont hurt
  • 1 green pepper
  • 1 1/2 TBSP olive oil
  • 1/2 tsp smoke flavor
  • 1 TBSP smoked paprika
  • 1 TBSP tomato powder you can buy it on Amazon
  • 1 tsp onion powder can sub in onion flakes or chopped onion
  • 1/2 tsp salt more to taste

Instructions

  • preheat grill on high heat
  • add 1/2 TBSP oil to a large cast iron skillet, swirl to coat the bottom
  • wash and dry the vegetables
  • cut the potatoes and pepper in roughly bite site pieces
  • toss with remaining oil and the smoke flavor in a large bowl
  • add the paprika, tomato powder, onion powder, toss to combine
  • pour into the skillet, cover with foil
  • reduce the heat on one burner of the grill to medium, place the skillet over that burner, close the lid and let the potaoes cook for roughly 10 minutes, then remove the cover, close the lid and cook another 5-10 minutes, stirring occasionally
  • once the potatoes are cooked through sprinkle with the salt and serve

Notes

you can buy tomato powder on Amazon and in most spice markets--you could leave it out but it really adds the oomph to make these taste like a barbecue chip
