Monkey Bars
Monkey Bars are a great, new to me, way to use up overripe bananas, thank goodness too because we only have one dedicated banana eater in the house and they’re always getting too ripe before he eats them all.
Ingredients
  • 3/4cup butter
  • 1/2cup Sugar
  • 3/4cup brown sugar
  • 1 egg
  • 3-4 bananasmashed, overripe
  • 2 1/4cups flour
  • 2tsp baking powder
  • 1/2teaspoon salt
  • pinch cinnamon
  • 1cup mini chocolate chips
Instructions
  1. grease a 15x10x1 baking sheet
  2. preheat oven to 350˚
  3. whip the butter with an electric mixer until soft and fluffy, scrape the bowl down few times if using a stand mixer
  4. beat in the sugar
  5. add the egg and beat well
  6. mix in the mashed bananas
  7. in a separate bowl mix the flour, baking powder, salt and cinnamon
  8. stir the flour mix into the butter banana mixture
  9. mix until completely incorporated
  10. stir in the chocolate chips
  11. spread in the greased 15x10x1 baking sheet
  12. bake in 350˚ for 25 minutes
