Corn and Black Bean Salsa (cheater style)
A quick cheater style recipe for Corn and Black Bean Salsa. A recipe you can whip up with basic pantry ingredients, which means you can keep it on hand and ready to roll at all times.

  • 2 cups good salsaI keep Costco Salsa on hand but feel free to use homemade if you have it
  • 1/2can black beans
  • 1/2cup cornI used frozen corn thawed under hot water, use what you have on hand
  • 1TBSP lemon juice
  1. poor the salsa in a mixing bowl
  2. drain the black beans and add half the can to the salsa, feel free to add more beans if you like
  3. if the corn is frozen thaw it under hot water, quickly steam it of cook in a small amount of water, whatever works best for you
  4. stir everything together
  5. add the lemon juice and stir again
  6. chill until ready to serve, or throw it to the wolves if that’s how you roll
