Corn and Black Bean Salsa (cheater style)
This was one of those recipes. The “OMG these kids have eaten EVERYTHING quick and easy, what’s left in the Costco pantry??” Hustle hustle, sweat, sweat, panic… “ohhhhh salsa, ohhh chips! Hmmmm but how can I make this salsa more substantial and keep them fuller, longer? Yes I’ll add beans and corn! Whew.” Those quotes are my inner dialogue, shared for all the world to see. I call this kind of “cooking” cheater style, really you’re just creating something new from a couple of excellent sources, while it’s delicious, it’s not quite cooking, hence cheater style.
When you have teens you have to be, HAVE. to. be., ready for anything. More food. Rides at 10pm. Shoes outgrown in a week. New coats right after they get new coats. More food. Homework meltdowns. Tons of “dirty” clothes, not worn but dirty. Hormonal workouts. More food. Really though all in all I think as long as you have food to feed them and their friends you’re pretty safe and everything else will fall into place.
This recipe came out of a slight panic attack as you read and the result is now a proven winner. Every trace has been eaten and kids who don’t even like salsa asked if there was more. In fact they seem to have licked the bowl clean and eaten every single scrap of corn chips too. I have three boys, two are currently teens/tweens, one no longer lives at home, he’s off on his own. I am pretty sure we’re glad we don’t have three teen boys at home, I don’t think we could afford to feed them all.
Corn and Black Bean Salsa (cheater style)
Ingredients
- 2 cups good salsa I keep Costco Salsa on hand but feel free to use homemade if you have it
- 1/2 can black beans
- 1/2 cup corn I used frozen corn thawed under hot water, use what you have on hand
- 1 TBSP lemon juice
Instructions
- pour the salsa in a mixing bowl
- drain the black beans and add half the can to the salsa, feel free to add more beans if you like
- if the corn is frozen thaw it under hot water, quickly steam it of cook in a small amount of water, whatever works best for you
- stir everything together
- add the lemon juice and stir again
- chill until ready to serve, or throw it to the wolves if that’s how you roll

- add more or less corn and beans if you like, this amount works for us but make this recipe yours
This sounds yummy! I have a couple of kids that aren’t crazy about salsa, but I’m thinking they might like this. I’m going to give it a try!
