Rich and intense chocolate truffles are such a simple candy to make at home. Yet they taste like they take hours to prepare and like you spent a lot of money to make them! Neither of those could be farther from the truth.

These homemade truffles use TWO ingredients in the trufflles themselves and require very little hands on work! In fact it’s just a lot of resting, cooling, and stirring.

There are Two Types of Homemade Truffles

Truffles come in TWO versions. One is a cream and chocolate version that makes a simple but decadent candy that you then roll in a coating, like unsweetened cocoa powder. These are called “ganache truffles” because they’re so similar to homemade ganache.

The OTHER kind of truffle are made with chocolate and other ingredients, rolled in a ball, and dipped in a candy coating of some sort. You can even fill them with liqueur if you want to get fancy. In my head, these are “filled truffles” because they’re a filling that gets dipped in a melted coating.

Both are equally amazing candies to make at home and give to friends. But today we’re talking about the first ganache truffles.

And while not technically a truffle, these are the same shape, so they work, right? These Rum Balls look and sound AMAZING!!

What to roll Ganache truffles in

The fun thing with these truffles is deciding what to roll them in to finish them. There are lots of choices out there. Here are a few ideas:

  • Unsweetened cocoa powder
  • chopped white chocolate, milk chocolate, or dark chocolate
  • chopped nuts of any kind
  • cookie sprinkles or jimmies
  • coconut
  • mini chocolate chips
  • graham cracker crumbs
  • cookie crumbs

But if you can imagine it, you can add to the outside of your truffles.

Can I add flavors to the inside of the truffles?

You sure can. You can add vanilla paste, or a little ground cinnamon, or just about any flavor that comes in a dry version. The thing you don’t want to do is add a bunch of non-cream liquid to the filling because they just won’t set up the same.

How to Store Homemade Truffles

Both types of homemade truffles are best stored tightly covered in the fridge. BUT they taste best when enjoyed at room temperature, so give them a little time to warm up before enjoying them.

Ingredients

  • 3/4 pound good dark chocolate
  • 3/4 cup heavy cream
  • unsweetened cocoa powder see notes for other ideas for the outside

Instructions

  • finely chop the chocolate and put it in a heat-safe bowl
  • bring the cream JUST to a boil over medium heat, don't let it scorch or boil hard
  • pour the hot cream over the chopped chocolate and let it sit for 8-10 minutes
  • then stir with a spatula to combine it
  • cool another 15 minutes at room temperature then scrape it into an 8×8 pan
  • cover with plastic wrap right on top of the chocolate then cool in the fridge for about 30 minutes don't let it get hard, you want it to be pliable
  • scoop the truffle mix out with a spoon or cookie scoop and lay it on a baking sheet
  • chill 10-15 and then form them into 1 inch balls with your hands if desired, you can leave them rustic shaped if you like!
  • roll in unsweetened cocoa powder

Notes

Other things to roll them in:
coconut
chopped nuts
chopped chocolate
mini chocolate chips
cookie sprinkles
You can make these truffles ANY size you like, just remember you'll get more or less servings depending on the size you make.
