And the heat keeps coming. Believe me I am NOT complaining, I am just so astonished by the AMAZING weather we are having I HAVE to talk about it. Two years ago we hit an all time high number of rainy days in a row, I think it was 64? Correct me someone? So when you’re last two summers have vied for WORST weather and most consecutive rainy days a stretch of 3 plus weeks of glorious weather is pretty awesome. And the mid to high 80s is HOT for people who regularly wear winter coats until April, in fact I JUST put mine away after it snowed. In May.

Cooking has been a DREAM with the heat because we’re remodeling and I put up all of our meals in bags for crock potting, or for grilling and generally not having a kitchen. I planned to just add fruit and fresh veg to most meals for a complete meal. And it’s working out just fine except sometimes I want to mix it up a bit. Enter this zucchini salad. It requires MINIMAL cooking and can be made ahead and brought back to room temperature before serving=WIN.

Creamy Zucchini Salad

3 8-10 in zucchinis–washed
2 teaspoons oil–I used coconut but use what you like and what you have
1/2 teaspoon salt
2 ounces of goat cheese
2 TBSP pesto

slice the zucchinis into about 1/2 inch slices–bigger or smaller are totally fine too
once sliced set aside
heat the oil in a medium skillet over medium heat
once warmed add the zucchini and cook for 2-3 minutes
you don’t want super soft zucchini just generally crisp tender
remove from the heat and pour in a bowl
add the cheese and stir
then add the pesto stirring to coat thoroughly
chill until 20 minutes before using if not serving right away

My kids fought over the last little bit so be prepared for a battle. Or serve it up and divide it evenly right off the bat to make for a battle free meal. Or heck double it and have leftovers.
