ahhhahah jokes on me–of course when I say find a Paleo mayonnaise, folks are going to email me and ask for a recipe or a brand name. So when I went to the grocery store I got to looking real good at the store bought mayo and quite honestly even the ones without soybean or corn oil were chalk FULL of crap that’s just not good for you. There was not one brand I would point to, say eat that and then not feel guilty about it.
I knew then my future was in homemade mayonnaise so I cruised over and picked up a big bottle of olive oil because I could not imagine coconut oil making a very good mayonnaise. Get good real olive oil too, in a glass bottle if you can swing it. To make a good homemade mayonnaise you will need a food processor OR a whisk and a bowl. I would be hard pressed to make mayonnaise with a whisk and a bowl though but it CAN be done.
(Paleo) Homemade Mayonnaise
pinch of dry mustard
2 pinches of salt
1 cup oil
1 TBSP lemon juice
whirl the egg, mustard and salt until frothy in the food processor
with the processor running drip in 1/2 cup of the oil, literally drip by drip
then drizzle in the rest in a steady stream
don’t turn it off keep it running and add the lemon juice in a drizzle too
scrape into a jar and store in the fridge for 5 days
