I’ve been wanting to make French Onion Soup for a long time and I finally did, yum. I was inspired by a friend who went on a trip to Germany and reported that her favorite meal was eaten in France and involved an Onion Pie. I thought onion pie MIGHT push little boys to their limit so I went the easy cheesy route. Who can resist cheese on bread in soup?? Apparently not my sons. Since this went over so well I think I will slowly morph it into a french onion pie, lots of onion bit of cheese and see how it goes down. Thoughts??
You will need 4-6 large oven proof bowls for this soup–I trotted out a motley collection of vintage Pyrex and Corning Ware, have fun with it!
French Onion Soup
1/4 cup butter
2 large onions
2 Tablespoons flour
2 quarts beef broth, get the good stuff without MSG and that junk
1/4 cup cold coffee
1 cup water
loaf of french bread
6-8 slices of swiss cheese, or about a quarter pound shredded
melt the butter over medium low heat in a large heavy bottom dutch oven
clean onions and slice in half from top to bottom
then lay cut side on cutting board and cut top to bottom
when the butter is melted add the onions and stir to coat
let slowly cook over medium low heat until they are soft, succulent and deliciously caramelized
don’t let them burn or scorch
sprinkle the flour over the onions and stir for a few minutes
slowly whisk in the broth, coffee and water
bring to a boil, reduce heat and simmer for 10 minutes or so
meanwhile get 4-6 heat proof bowls ready on a baking sheet
cut as many slices of bread as you need
preheat the broiler
when the soup is done ladle it into the bowls lay a slice or two of bread on top
divide the cheese evenly between the bowls covering the bread
broil for 5 minutes or until the cheese is melted and bubbly
serve with extra bread
more than likely you’ll have a bit of soup left, we simply ate it with the extra bread

Looks delicious!! For introducing the boys to the onion pie, I suggest you give it a (different) fun name, maybe if they don't hear the word onion, they will give it a chance.
