This recipe for No Bake Low Carb Peanut Butter Bars is a new to me favorite. I eat one every single morning to kick off my day in true Low Carb Keto Style. And since I’m controlling my Insulin Resistance with a Low Carb Keto Diet these No Bake Low Carb Peanut Butter Bars are the perfect recipe for me to make because on the Keto Diet you need more healthy oils in your diet. I was low on healthy oils and feeling the effects until I started eating one of these No Bake Low Carb Peanut Butter Bars every day. Keto folks know that you’ve got to eat those fats to get the energy boost like a carbohydrate and for me it helps me to feel fuller, longer. But furthermore in researching this piece I found link after link citing the fact that unsaturated fats can help you maintain a healthy weight, period. Ok I’m sold!

I know a lot of keto folks like to make and eat a fat bomb, basically a high fat combo of ingredients made into a 3-4 bite piece. Ok that sounds weird, I know, but people LOVE them. Fat Bombs are typically made of coconut oil, coconut cream, heavy cream or cream cheese and have all sorts of added ingredients to flavor them one way or another. I made a batch and had a little trouble choking through the “bomb”, it just felt like too much. So when I was thinking up this recipe I knew I wanted it to be less bomb and more bar but still get that healthy oil punch.

Also? people don’t react negatively to a No Bake Low Carb Peanut Butter Bars but their eyes will roll back in their heads if you offer them a Fat Bomb. Either way the ingredients are very similar AND you get all those tasty (thanks Barleans!) healthy oils.

Peanut Butter Bark for everyone. This recipe makes a bark high in healthy oils and fiber perfect for the Keto diet but delicious enough to be enjoyed by everyone.

Instructions
  1. line an 8x8 baking pan with foil and cover with parchment paper if desired
  2. sprinkle with half the digestive blend, coconut and cinnamon and then set aside
  3. melt the coconut oil over medium heat, once melted remove from the heat and whisk in the peanut butter powder
  4. pour in the prepared pan and gently tilt the pan to cover the bottom if needed
  5. once it's done spreading sprinkle on the remaining digestive blend, coconut, cinnamon and salt if desired
  6. cool in the refrigerator for a minimum of 20 minutes, then cut in 8 pieces and store in the refrigerator--these will not last long out of the fridge so keep them there until you're ready to eat them
  7. makes roughly 8 servings
