My husband LOVES the heat of hot sauce, everything needs a dash or 7 of whatever is available.  Last year for Christmas I made him his very own Homemade Sriracha (best present ever–I never have to dust it), then I got excited and made myself some not so hot Mild Sriracha. That was a huge hit with everyone else who doesn’t feel the extreme need for heat, read everyone else in our house and most normal people.

Recently I bought a nice big bag of mixed frozen hot peppers from our food co-op with the idea that I would make my husband the hottest of the hot sauce. The hot pepper mix included habaneros, green jalapeños, red jalapeños Thai peppers, serranos and some that I didn’t even know what they were. I cooked this down when my kids weren’t home, good thing too the fumes made me cough. I also wore gloves anytime I was touching peppers, I highly recommend disposables here.

Mixed Hot Pepper Sriracha

Instructions
  1. cut the stems off the peppers
  2. chop the peppers coarsely and place them in big jar
  3. smash the garlic and peel off the paper, add that the ginger to the jar
  4. stir the vinegar and honey together and pour over the top of the peppers
  5. cover and let rest over night
  6. the next morning pour the whole jar full in a sauce pan
  7. bring to a boil over medium heat
  8. reduce heat and let simmer for 15 minutes
  9. cool completely
  10. once cool whirl in a food processor for 4-5 minutes or until smooth
  11. push it through a sieve to remove any last seed chunks
  12. pour into a jar and refrigerate
My husband came home and I gave him a dab on a spoon. His ears turned red, he coughed and said “finally heat, just the way Tabasco USED to feel to me.” Endorsement.
