Since our youngest son was diagnosed as a very early stage type one diabetic I’ve started shifting our meals around a bit. I’ve been adding more veggies to choose from, more meats and often add a plate of fresh fruit and vegetables to the table to entice everyone into eating more fresh produce. We decided early on that we would support his diagnosis by making these sorts of changes so that everyone was eating the same meals and no one felt unduly charged with eating better food, while the rest of us indulged wholeheartedly in carbs.

I myself have gone totally low carb and consume very little carbohydrates because truly I need a diet reset and could stand to lose some weight weight. I’m also experimenting in a little gluten free action to see if my psoriasis and eczema clear up as well. I don’t expect anyone to follow me down this path, I’m loving it but it might make some people crazy to go with out bread or pasta.

The problem with all of this lower carb/more healthy choices is the type one diabetic, he’s 11 and he likes his carbs. In fact I’d go so far as to say he’s LOVES carbs, his idea of heaven is literally a pizza topped with mac and cheese, I know this, he’s ordered it before. So finding side dishes that aren’t carbs on top of carbs yet aren’t plain jane vegetables has been, how do you say that, a challenge.

Instructions
  1. toast walnuts in a dry frying pan over medium/medium high heat-dont let them burn
  2. while the walnuts are toasting, mince the garlic
  3. once toasted remove to a plate and set aside
  4. wipe out the frying pan add the garlic to the hot pan and cook for 30 seconds
  5. then add the spinach, stir until it wilts, if your pan is over filled follow the directions below for cooking in two batches
  6. tilt the pan and press lightly with a spatula to remove any excess water
  7. once drained add 1/2 feta and stir to combine
  8. once feta begins to melt and create a light creamy sauce remove from the heat
  9. top with toasted walnuts and extra TBSP of feta stir if desired and serve
Recipe Notes

you may want to cook the spinach in two batches if you're using a smaller pan, simply add the garlic pan and then half the spinach, then remove it to another dish and wilt the second half of the spinach, return it all to the pan and press to remove excess water

also add more feta if you like it only gets creamier and MORE delicious the more you add
