Yes, Banana Roll. It’s what happens when you have more “just about to go bad bananas” than you can use. It’s what happens when you find a pack of cream cheese in the fridge. It’s what happens because it’s Manifest Destiny.

Very similar to the Pumpkin Roll, different flavors, same filling, completely delicious. This is of course best kept in the freezer and thawed for a few minutes before slicing. If you don’t keep it frozen when you slice it, it will crush.

  1. heat oven to 375°
  2. grease 15 x 10-inch jelly-roll pan, line with wax paper
  3. grease and flour paper
  4. sprinkle a thin, cotton kitchen towel with powdered sugar and set aside
  5. stir together flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl
  6. beat eggs and granulated sugar in large mixer bowl until thick
  7. beat in mashed bananas
  8. stir in flour mixture
  9. spread evenly into prepared pan
  10. bake for 13 to 15 minutes or until top of cake springs back when touched
  11. immediately loosen and turn cake onto prepared towel
  12. carefully peel off paper, roll up cake and towel together, starting with narrow end
  13. cool on wire rack
  14. while it cools make the frosting: beat cream cheese, butter and vanilla extract until smooth,
  15. beat in 2 cups powdered sugar, granulated sugar
  16. add more powdered sugar until desired consistency is reached
  17. then carefully unroll the cooled cake
  18. spread frosting over cake
  19. re-roll the cake then wrap in plastic wrap and freeze
  20. when ready to serve remove from the freezer let sit for 5-10 minutes then slice and serve

So buy too many over ripe bananas and whip up one of these babies, you’ll love it. Your family will too, if they get any of it.
