If you’re into LESS dirty dishes. Then you should know this casserole can be mixed right in the baking dish. It’s a tight fit, but you can get it in there and stir it together if you’re careful. But being careful will result in less dishes. So go for it, if you want!

This recipe calls for lots of cheese and dairy products but nothing to out of the ordinary. Add these ingredients to your shopping list, and be ready to make a casserole that everyone will love!

  • Cooked Chicken (use leftover roasted chicken or any other cooked chicken)
  • Artichoke Hearts
  • Spinach

Let’s Break Down the Ingredients for this Spinach Artichoke Chicken Casserole

I have a few notes on the ingredients to help you grab the right things at the store.

The spinach is fresh spinach, cleaned and chopped. You can swap out the fresh spinach for frozen chopped spinach. Just let it thaw, drain it, and add it in!

The chicken is cooked chicken, if you have any leftover chicken or even even turkey you can use it here. Rotisserie chicken is perfect here, too. If you’re in a pinch try my air fryer grilled chicken to use in this recipe.

Look for artichoke hearts that are not pickled. You can use pickled hearts, but the flavor will take over your casserole. Not that it’s a bad thing, but it changes it.

Change Up This Recipe!

Add red pepper flakes or sriracha if you love a little kick. Or salsa would be fun too! If you want to change up your cheeses, try adding sharp cheddar or pepper jack for a change.

You’re in luck! This casserole tastes BETTER the next day. The flavors have melded more overnight, and things just taste better that way.

Store leftovers in an airtight container for up to three days. You can reheat this chicken casserole OR eat it cold. Try in a tortilla with lettuce as a wrap. That is an easy, tasty lunch right there.

  • 8 oz. cream cheese softened
  • 16 oz. sour cream
  • 1 cup parmesan cheese divided
  • 2 cups monterey jack cheese divided
  • 2 cloves garlic mined
  • ½ onion chopped
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • 4 cups chopped cooked chicken
  • 24 oz. artichoke hearts just canned not pickled, drained
  • 12 oz. fresh spinach chopped

Instructions

  • Preheat oven to 400º
  • In a large bowl, thoroughly combine cream cheese, sour cream, ½ cup parmesan, 1 cup monterey jack, garlic, onion, salt, and pepper together

  • Spread into a 9×13 inch casserole dish

This is a HUGE casserole. Seriously. It weighs several pounds.

  1. Would have been nice if you mentioned in the actual recipe portion that it was cooked chicken needed. The only place it is mentioned is in the “Let’s Break Down The Ingredients For This Spinach Artichoke Chicken Casserole” section. Most people I know don’t read through all the tips and just “jump to recipe”.
    Just a suggestion.
